Hearty Whole Wheat Pancakes

Ingredients
1 1/2 c.Whole Wheat Flour2 tsp Baking Powder1/2 tsp Salt2 TB Granulated Sugar1 large Egg, fresh, separated1 1/2 c. lowfat milk2 TB Canola Oil
Directions
Heat griddle or large pan.
Combine dry ingredients well. Beat together milk, egg yolk and oil. Beat egg white until stiff peaks form.
Blend wet and dry ingredients, gently fold in egg whites. Drop in 1/4 cup portions onto hot, lightly greased griddle, turning once to brown both sides.
