Banana-Oatmeal Pancakes

Ingredients
Coconut Milk, 1.5 cup Oats, 1 cup Banana, fresh, 2 small (6" to 6-7/8" long)Rice flour, white, 1/2 cupBaking Powder, 3 tsp
Directions
In a blender, puree soy milk and oats until smooth. Add bananas, flour, 1/2 tsp kosher salt, and baking powder and puree a few seconds more. Let batter rest 10 minutes.

Heat a large nonstick saute pan over medium heat. Mist with nonstick cooking spray, then scoop batter into pan in 1/4 c increments.

Reduce heat to medium low and cook pancakes until air bubbles appear and underside is golden brown, about 5 min.
