Applesauce Whole Wheat Pancakes

1 1/2 cups whole wheat flour1 tsp baking powder3/4 cup applesauce1 cup 2% milk1/4 cup egg substitute (or 2 egg whites)1 tsp vanilla extract1/2 tsp ground cinnamon
makes eight 4" pancakes (serving = pancakes)
Mix together flour and baking powder. Stir in remaining ingredients to form a smooth batter.
Spray heated frying pan or griddle with non fat cooking spray and cook pancakes.

To make these fluffier I added 1/2 tsp of baking powder and 1/2 tsp of salt. I used unsweetened applesauce and nonfat milk, but I fried them in canola oil, so maybe that equals out. Served with a sauce of one pint of blueberries, a bottle of pomogranate juice, and 3 tbsp tapioca. Simmer for 20 min - 7/24/11
