Lower Calorie Coconut Flour Pancakes

Ingredients
12 Tbs. coconut flour3/4 c. egg whites (I like 100% Egg Whites)1 c. unsweetened applesauce1 1/3 c. canned coconut milk3-4 packets NuStevia, or other sweetener to taste1 Tbs. pure vanilla extract1 tsp. baking soda1 tsp. apple cider vinegarDash of cinnamon.Pam for skillet.
Directions
Heat a non-stick skillet or pan to medium-high heat. Spray with Pam.

Mix all wet ingredients.
Combine with all dry ingredients. The batter will have an almost "fluffy" consistency to it. Stir until all the lumps are gone.

Plop on skillet in small amounts, you will have to spread the batter a bit thinner with a utensil.

Cook, flip. EAT.... REPEAT.

Serving Size: Makes 4 servings of 3 4" pancakes.
