Parmesan Potato Bake

6 medium potatoes (about 2 lbs) peeled and thinly sliced.1 cup low sodium fat free chicken broth1 Tbsp melted butter1 large clove of garlic, minced1/4 tsp salt1/4 tsp black pepper1/3 C fresh grated Parmesan1 Tbsp chopped fresh Parsley
Preheat oven to 375.
Spray 2.5 L (11 X 9) casserole dish with cooking spray.
1) Layer potatoes in dish.
2) Combine broth, butter, garlic, salt, and Pepper. Pour over potatoes.
3) Bake 50 to 60 minutes until potatoes are tender and top is golden brown.
Serving Size: Makes 6 servings
