Ingredients
4 c chicken broth4 c diced potatoes2 med onion2 T olive oil3 cloves garlic.5 t pepper, black
Directions
peel and dice potatoes. cook in chicken broth. Cook onion in olive oil in non stick skillet until soft and slightly caramelized. When potatoes are soft mash and add onion and pepper.
