Savannah's Chicken Quesadilla's

2 tortillas1 chicken breast about 3 oz, cut up or diced1 tbsp Southwest chipotle seasoning 1/4 cup kraft mexican 4 cheeses-shredded2 tbsp Fat free sour creamSalsa
You want to cook the chicken with the chipotle seasoning, I "fry" it cook it on the stove top but use only pam. Once the chicken is cooked shred it or dice it or cut it however you like.
Using a pancake griddle I lay out one tortilla put the cheese and chicken on it, and place another tortilla on top. let cook for about 3 minutes, and flip.
I cook just until the tortilla is warmed and the cheese is melted.
Cut into 8 pieces and put sour cream and salsa on top.

I made this with a few minor changes. I poached the chicken ahead of time and shredded it. Then I sprayed a pan with a tiny bit of cooking spray and threw in some onions, corn, and the chicken. I only used 1 tortilla and layered cheese, chicken/corn/onion, cheese; then folded the tortilla over. - 3/13/08
