Ingredients
Brown rice (1 cup cooked), 2 serving (remove)Tomato Sauce, .5 cup (remove)Coconut Oil, 1 tbsp (remove)Onions, raw, .25 cup, chopped (remove)Celery, raw, 1 cup, diced (remove)*M&M Meat Shop Boneless Chicken Breasts, 375 gram(s) (remove)Cheddar Cheese, .5 cup, shredded (remove)*Tomatoes, red, ripe, raw, year round average, .5 medium whole (2-3/5" dia) (remove)mexican spices
Directions
fry the rice in 1/2 coconut oil. add water when it begins to change color. add mexican spices (chili powder/cumin/onion powder) and tomato sauce to rice. cook according to directions, but at a slightly higher temp. fry chicken and celery/onions. add cooked rice and stir to mix. spread grated cheese and tomatoes on top, remove from heat and allow to stand five minutes before serving.
