Greek Crustless Quiche

1/2 cup fat free sour cream1/2 cup crumbled fat free feta1 tbsp parmesan cheese8 large egg whites1 tsps olive oil1 medium onion, diced1 clove garlic1 cup chopped green onions5 ounces baby spinach, shredded (1/2 pkg)1 medium tomato, seeded and diced1 teaspoon dried oregano1 teaspoon thymepinch of cayenne (optional)non-stick spray
1.Preheat oven to 350 °F (180 °C). Heat oil in a non-stick pan.
2.Add onion and green onion. Stir and cook till nearly soft. Stir in the garlic, cooking a minute or two more. Sprinkle with spices.
3.Add spinach and tomato; cook until wilted - about 2 minutes. Pour into oven dish coated with non-stick spray.
4.Sprinkle parmesan and feta cheeses over spinach mix.
5.In a mixing bowl whisk together the egg whites and sour cream. When combined thoroughly pour over spinach mix.
6.Lightly push spinach mix around just to make sure everything is covered.
7.Bake at 350 °F (180 °C) for around 30-40 minutes or until centre is set and lightly browned.
Serving Size: Makes 6 generous servings
