1 T olive oil2 cloves garlic, minced1 medium onion, chopped1/2 red pepper1/2 green pepper1 lime, zest and juice½ tsp salt½ tsp black pepper24 large uncooked shrimp, split and deveined2 T chopped fresh cilantro
Heat the oil in a heavy skillet over medium-high heat. Add the garlic, onion and peppers. Cook, stirring until the onion begins to wilt, approximately 3 minutes. Continue cooking until the onion becomes translucent, approximately 3 additional minutes. Add the shrimp, zest and lime juice, salt and black pepper. Cook until the shrimp are just opaque. Be careful not to overcook. Remove the pan from the heat and stir in the cilantro.
Can pour over rice or noodles, or eat just as is.
