whole grain apple walnut pancakes

Ingredients
2 cups whole grain baking mix1 tb olive oil.5 cup 1% milk.5 cup water3 egg whites1/2 cup shredded apples2 tb. cinnamon1/2 cup chopped walnuts
Directions
Mix all ingredients. Start with all the liquid ingredients and then add the mix. I used powdered eggs diluted in warm water. Follow the instructions on the can if you choose to do this. Spray a griddle or large frying pan with non-stick spray and heat on medium high. Pour 1/4 cup mix creating 4-5 inch round pancakes. when the batter in bubbling on top flip over and cook another minute or 2. You should end up with 12 pancakes or 6 servings. I top with 1/2 tbs smart balance buttery spread (not included in cal) and 1/2 tb pure maple syrup (not inlcuded in cal.)

    The batter was not runny enough. I added more milk and it still was too thick. These don't taste like pancakes BUT they are delicious. Maybe it was because my batter was so thick, mine reminded me an apple cinammon bread. Still, very yummy. Kids liked them too. - 8/16/09
