Lightlife Smart Cutlets, 2 cutlet package1/4 cup Butter, unsalted1 cup Mushrooms, sliced1/4 cup Onions, chopped1/3 cup All Purpose Flour1 tsp Salt1/2 tsp Black Pepper1/4 tsp Cayenne Pepper1 cup Vegetable Broth, low sodium1 1/2 cup Almond Milk, unsweetened original1 cup Green Peas1/4 cup Pimentos2 Tbsp Sherry, dry (optional)
Brown cutlets in pan, then chop and set a side. Melt butter in pan and saute onions & mushrooms just until soft. Then add flour and spices and cook for 1 minute (if too thick, add a little of the broth). Add both the broth and milk at once and stir until thickened and bubbly (about 15 minutes). Next add cutlets, peas, pimentos, and sherry (if using). Cook for another 5 to 10 minutes until peas are tender and flavors meld.
