Stuffed Italian Turkey Meat Loaf

Meat mixture:1 lb. extra lean ground turkey breast1 egg1/2 c. seasoned Italian bread crumbs1 small red onion, finely diced1/2 sweet bell pepper, finely diced1 T. chopped fresh basil3/4 c. prepared pizza sauceFilling:1 c. part skim ricotta cheese1 egg1 T. chopped fresh basil1 tsp. dried oregano
Mix first set of ingredients (meat mixture) in large bowl, and mix second set (filling) in a separate bowl. Press about 2/3 of the meat mixture in a loaf pan sprayed with nonstick cooking spray. Spread on all of the filling mixture and then top with remaining meat mixture, being sure to completely cover the filling with the meat. Bake uncovered at 350 degrees for 1 hour, and let stand 5-10 minutes before serving. Makes 8 slices about 1 inch thick (depending on size of loaf pan).
