Beef Barley Vegetable Soup

Ingredients
* Pacific Natural Foods Beef Broth, 9 cupsany low sodium beef broth will do * Carrots, raw, 1.5 cup, chopped * Celery, raw, 1.5 cup, finely diced * Onions, raw, 1 cup, finely diced * Mushrooms, fresh, 227 grams or an 8 ounce package of pre-sliced mushrooms * Garlic, 4 cloves * Barley, pearled, raw, 1.5 cup * Salt, .5 tsp * *Extra Virgin Olive Oil, 2 tbsp spinach 1 bunch or 3-4 cups choppedhot sauce 2 tsp
Directions
heat the oil in a pan
chop/mince all of your onion, carrot, celery, and garlic
Put all of that in your pan and saute until soft
add you mushrooms, saute until mushrooms start to brown

chop up your spinach
add your raw pearl barley and saute a few more minutes

add 3-4 cups of spinach or 1 good sized bunch, stems cut off and chopped saute until wilted

Add your broth, put a lid on, and simmer for 20 minutes
salt and pepper to taste and add the 1 tsp of hot sauce

One serving = 1 cup

    i made this by the recipe, but added stew meat. it was exactly like the soup I remember from the hometown restraunt i used to waitress at. my entire family loved it and the kids didn't even notice the mushrooms and spinach - 1/23/11
