1 cup non fat cottage cheese3 egges.5 cup low fat cheddar cheesespinach frozen 1 packet (optional)fresh herbs such as tarragon, parsley or chives
Preheat oven to 350degrees. Place cotage cheese and egg in blender- run for 1 min until fully combined. Add half the cheddar cheese and run for 10 sec. Pour mixture into bowl and blend in remaining cheddar cheese and herbs and spinach wtih spoon. Pour into 4 ramekins, place on cookie sheet and bake for 40-45min until puffy and starting to brown. Serve warm
