Northern Bean Lemony-Garlic Spread

1-1/2 cups dried Great Northern Beans10 cloves of garlic, minced1/2 cup of fresh squeezed lemon juice (about 2 large lemons)1/4 cup of extra virgin olive oil1 tablespoon black pepper1/4 cup of salt
Soak beans for 6-8 hours, or overnight. Drain and rinse. In a saucepan or dutch oven, add beans and about 4-3/4 cups of water. Bring to a boil, then lower to a low boil/high simmer for 1 to 1-1/2 hours, or until soft. Drain beans put into a large bowl. Mash with a potato masher until desired consistency. Let beans cool.
Add minced garlic, lemon juice, olive oil, black pepper, and salt. Combine well. Chill until ready to use.
Serving Size: Makes 8 1/2-cup servings. Makes ~4 cups total.
