Mini Egg Quiches

Ingredients
1 12 oz can of evaporated milk3 eggs, beaten¼ tsp salt¼ tsp pepper2 C shredded cheeseAbout 2 C mix-in veggies/meat
Directions
- Whisk milk, eggs, salt and pepper in a medium bowl until blended
- Stir in cheese and veggies/meat
- Spoon mixture into 12 greased muffing cups; filling to rim
- Bake 23-25 minutes at 350 degrees until tops turn light brown
- Cool in pan 15 minutes
- Run a knife around edges and carefully remove onto cooling rack with fork

Serving Size: Makes 1 muffin-sized quiche
