Whole Wheat Chocolate Chip Cookies

Ingredients
1 cup melted coconut oil3/4 cup firmly packed brown sugar3/4 cup Stevia in the Raw2 eggs1 tsp vanilla2 2/3 cup organic whole wheat pastry flour1 tsp baking powder3/4 tsp baking soda1/2 tsp salt5 oz package semi-sweet chocolate chips (Enjoy Life Brand if dairy free is needed for allergy reasons)
Directions
Cream together the melted coconut oil, brown sugar, stevia, vanilla, and eggs using a mixer. This will not create a super-creamy mixture like it would if you were using butter and white sugar - no worries! Wisk together the dry ingredients. Mix the wet ingredients into the dry ingredients on low until thoroughly combined. Do not overmix. Add chocolate chips. Using a small ice cream scoop to measure out cookies. Bake at 350 degrees for approximately 12 minutes.
