White Bean Shiitake Hummus

Ingredients
1 can white beans (I used cannellini), reserve liquid2 cloves garlic (1/2 to start if you aren't REALLY into garlic)1/2 tsp salt1 tbsp tahini3 tbsp sunflower seeds2 tbsp green onion, chopped1 cup shiitake mushrooms1 tbsp olive oilJuice from 1/2 lemon
Directions
Put drained beans, garlic, salt and tahini in a blender. Begin blending and slowly add the shiitakes. If you like chunky hummus, use your best judgement with this part. Add the sunflower seeds and continue blending. Add the olive oil and continue blending. Add the lemon and green onion and continue blending. If you like your hummus a bit thinner, add 2-3 tbsp of the reserve liquid from the beans and continue blending.
Place in a bowl and top with some extra green onions.
