Italian Style Hamburger-Zucchini

2 T olive oil1 lb hamburger1 med zucchini, diced1/4 small onion1 portabella mushroom, chopped1/2c Aurora strained tomatoes 1/2c water2 tsp garlic powder1 T Italian herbs4oz mozzarella, sliced
Saute ground beef and garlic powder in oil. Add zucchini, onions and mushrooms, herbs when no longer pink. Saute for 5 minutes, then add strained tomatoes and water. Let simmer for 5 minutes or so, then place sliced mozzarella on top and let melt. Serve over spaghetti squash. Makes 2-4 servings (Nutritional count is for 2)
