Breakfast Quinoa, Apples, Walnuts, and Cranberries

1c dry quinoa1 3/4c water4oz applesauce (snack size, unsweetened)1t cinnamon1/3c chopped walnuts1/2c dried cranberries2-3 medium sweet apples1T finely chopped mint1 lime1T honeyServes 8-10
Soak the quinoa for 15 minutes
Bring quinoa, water, cinnamon, and applesauce to a boil. Let it simmer for 15 minutes or until the water is evaporated.
Cool in fridge for an HOUR.
Chop the walnuts, cube the apples, squeeze the limes, drizzle the honey, mince the mint, mix in the cranberries and fluff the quinoa together. Voila!
