Heather's Christmas Quiche

A 1 lb sausage roll (I like Tennessee Pride, once cooked and crumbled, will be about 10 oz)Package of frozen broccoli, thawedPint of white mushrooms, slicedMedium onion, chopped1 cup shredded cheddarUnsweetened almond milk (feel free to use regular milk, I'm sensitive to the lactose in milk, but I can tolerate cheese)8 large eggs, beatenSalt, pepper, hot sauce as desired
Preheat oven to 325 degrees
Brown the sausage, set aside. Save about 1 tbl of drippings to saute the onion. Once slightly tender, add the mushroom and continue to saute until tender. Add onion and mushroom to sausage and mix in large bowl with milk, cheese and broccoli. Add eggs last, as the other ingredients will be relatively cool by now. Season as you like and pour into a pie plate or 8x8 casserole, sprayed with nonstick cooking spray. Bake until a knife inserted in the center comes out mostly clean (no wet egg!) All ovens are different, and mine is terrible. It has taken over an hour. Keep an eye on it, it might take a normal oven 45 minutes.
