Low Carb Creamy Broccoli Soup

Ingredients
2Tbs. Butter1 small onion16 oz. frozen broccolisalt & pepper to taste1 tsp dry mustard4 C. Chicken stock3/4 Cup Heavy Whipping Cream1-1/2 Cups Shredded Cheddar Cheese
Directions
Saute diced onion in metled butter until slightly browned. Season with salt, pepper, & dry mustard. Add Frozen broccoli and stock. Simmer/boil until soft. Blend with an immersion blender until desired consistency is achieved. Add Cheese and stir until melted. Add Cream and stir to combine. Serve.
