Clean stuffed peppers

Ingredients
1 lb ground turkey breast1 medium red onion chopped2 1/2 cups cooked quinoa2 cups clean diced tomatoes 2 minced garlic cloves1 tsp oregano1 tsp basil1 tsp smoked paprika1/2 tsp crushed red peppersalt and peppergrated cheese (optional)
Directions
Prepare peppers: wash and cut tops off, remove pith and seeds. Spray casserole dish and sit peppers inside, level by trimming bottoms of necessary. Sautee' onion until soft, add ground turkey and cook till no longer pink. Add garlic, paprika, crushed red pepper, salt and pepper, basil and oregano. Cook for 3 minutes then add 1 cup of tomatoes. Simmer for 5 minutes then add quinoa. Fill peppers, pour remainder of tomatoe sauce on top of peppers in casserole dish. Sprinkle with grated cheese if desired. Bake at 350 degrees for 1 hours covered.
