Chicken with Snow Peas

12 ounces skinless, boneless chicken breast, sliced into thin strips1 medium onions, chopped/diced1 cup diced red sweet pepper 5 medium mushrooms, sliced1.5 cups fresh snow peas2 Tablespoons Kikkoman Lite Soy Sauce1 teaspoon arrowroot starch mixed in 1/4 cup water1 Tablespoon olive oil
Heat olive oil in a wok or very large skillet. Add sliced chicken and stir to quickly cook. Add onion and stir, let cook about 3 minutes. Add the rest of the vegetables, stir, and let cook briefly (1 or 2 minutes). Drizzle soy sauce over this, and mix again. Move food to one side of pan and slowly pour arrowroot and water into the liquid in the bottom of the pan, stirring as you do so. This will thicken the sauce. Quickly stir the thickened sauce into the still-liquid sauce on the other side of the pan. Stir this all together, and serve over brown rice. (Rice calories are not included in this.)
