4 frozen salmon filets (I use High Liner)1/2 bag frozen chopped broccoli1 TBSP + 1 tsp margarine2 TBSP flour1 cup skim milk1 cup shredded low fat cheddar cheese1 pkg instant mashed potatoes, prepared
Place frozen salmon in bottom of casserole, try not to overlap. Layer 1/2 bag frozen chopped broccoli over salmon. Prepare cheese sauce using flour, margarine, milk and cheddar cheese. Pour prepared sauce over filets and broccoli. Place mashed potatoes on top. Bake at 375F for 45 minutes.
