2 boneless, skinless chicken breasts1-15.9 oz can diced tomatoes, no salt2 cups fresh baby spinach1 Tbs basil1 Tbs oregano1 clove garlic, minced1 cup white ricesalt, pepper, & grated parmesan to taste
Boil chicken breasts over high heat in stock pan till done (approx. 15 mins). Remove to cool & add rice to stock, boiling for approx 12 mins. Shred chicken & add to rice along with can diced tomatoes, spinach, basil, oregano, garlic. Add salt & pepper to taste. Continue to boil on med heat for 5-7 mins. Serve with grated parmesan, if desired.
