2 large or 4 small chicken breast halved1/2 tsp fresh ground pepper3 cloves garlic grated2 tbs ginger gratedMarinate in the lemon, garlic, pepper and ginger
Combine the lemon juice, ginger, pepper and garlic in a small bowl. Place the chicken breasts in a deep bowl, pour on the ginger mixture, turn once to coat both sides, cover and refrigerate for 30 minutes to 2 hours.
Spray a large non-stick frying pan with cooking spray. Heat the frying pan on medium-high heat until hot. Add the chicken and cook, turning once, until tender, about 8 minutes.
Serving Size: Makes 4 to 8 servings dependent on size of breast
