Cauliflower Mashed Potatoes

Ingredients
1 Medum Head Cauliflower1 TBSP cream cheese softened 1/2 cup cheddar cheese Salt and pepper to taste3 TBSP salted butter (can use unsalted as well)4 strips cooked bacon1 tsp minced garlic4 Tbsp coconut milk (Can use regualar milk as well)
Directions
Cook cauliflower until well done. Make sure you drain all the water you used to cook the cauliflower off before adding other ingredients. Puree the hot cauliflower with the cream cheese, coconut milk, butter, minced garlic, salt and pepper until smooth. Cook the bacon until crisp. Place cauliflower in baking dish and top with cheddar cheese and crumbled bacon. Bake at 350 degrees until hot and cheese has melted. Serve.
