Gluten-Free (Flourless) Banana Chocolate Chip Muffins

Ingredients
3 c. old-fashioned oats1/2 c. brown sugar2 t. baking powder1/2 t. salt2 eggs1 1/4 c. milk2 ripe bananas, mashed1 t. vanilla3/4 c. chocolate chips
Directions
Preheat oven to 350 degrees. Grease muffin tins.

Combine oats, brown sugar, baking powder, and salt in a large bowl. In separate bowl, combine eggs, mashed banana, milk, and vanilla.

Add dry ingredients to this mixture. Stir until everything is thoroughly combined. Add chocolate chips.

Spoon mixture into prepared tins. Bake 18-22 minutes or until a toothpick inserted in the middle comes out clean.

Let cool 10 minutes, then remove from pans.
