Black Bean and Corn Salad with Cilantro Lime VinaigretteServes 7- 1 cup (ish)Ingredients2 cans black beans (drained/rinsed)1 can sweet yellow corn (drained)2 c. or so sweet pepper, chopped2 c. or so tomatoes, chopped1/3 c. finely chopped red onion1/2 c. roughly chopped fresh cilantroCilantro Lime Vinaigrette1/3 c. extra virgin olive oil2 Tbl honey, agave nectar or other sweetener of choice2 Tbl white balsamic vinegarJuice and zest of 1 lime1/4 tsp. salt1/3 cup cilantro3 Tbl. red onionPuree all vinaigrette ingredients in blender or food processor, pour over salad and toss until evenly coated. Can be served room temp or cold. Toss again right before serving.
