Ingredients
1/2 cup rye flour ( whole grain )1/2 whole grain whole wheat flour1 cup plain flour (unbleached bread flour)1/2 tsp baking powder1 tsp salt2 tablespoons olive oil2/3 cup warm water
Directions
put all dry ingredients into a bowl stir well then sift

add olive oil and mix with a fork or fingers until crumbly.

add water stirring well.

turn out onto a lightly floured work surface and knead until smooth, about 8 - 10 minutes

replace in clean bowl and cover for about 30 to 45 mins.

heat a griddle or a heavy pan on the stove to about medium heat.

separate into 8 equal pieces, roll into balls and with a rolling pin and some flour roll until about 1/16" thick.

lay on the griddle or pan and let cook until small bubbles form. flip and cook on the other side until a little brown color forms on the bubbles, then turn back to original side for a minute. Roti may puff like a balloon thats ok and is good actually

remove and repeat for the other seven pieces.

this bread is soft chewy and very flavorful.

I added some cumin to it. I think you could add any of your favorite powdered spices. The cumin gave it a hummus flavor and was very yummy with my beef soup.

    I made it as described, but perhaps rolled it too thin because it cooked up more hard than soft and chewy. Next time I will add spices and not roll it as thin. Flavor of rye was not as strong as I thought it would be. - 3/16/08
