Banana-Oatmeal Bread with Organic Buckwheat Flour

Dry:1 Cup Old Fashioned Oatmeal1 Cup Buckwheat Flour1 tbsp cinnamon1 tbsp Baking Powder1tsp Baking SodaWet:1 tsp vanilla1 Large Egg3 Large Bananas- Ripe
Pre-Heat oven to 375 degrees.
1. Grind Oatmeal in food processor until it is a flour like consistency.
2. Mix all DRY ingredients
3. Whisk egg, add banana and vanilla and mash until smooth.
4. Add Wet to dry.
5. Place mixture in a loaf pan with non fat cooking spray.
6. Bake at 375 deg for 40 minutes
Serving Size: Makes 1 Loaf: 10-12 servings

Thank you so much. This recipe produced an amazing result. I added 1/2 cup of walnuts and 1/2 cup of cranberries to it, as well as 2 tbsp of coconut oil and 3 tbsp of yogurt. I also used a little less oatmeal flour (only 1/2 cup) and added some pumpkin pie spice for flavor. Awesome result! - 11/22/14
