Ham, Goat Cheese & Spinach Mini Frittatas

Ingredients
12 large eggs1 cup diced ham4 oz goat cheese, crumbled2 cups fresh spinach1 tablespoon olive oil1/2 cup milk
Directions
Wisk eggs, ham, milk, and cheese together in a large bowl. Saute spinach with 1 tablespoon olive oil. Cool slightly and add to egg mixture. Poor egg mixture into a greased muffin tin, filling each evenly. Bake at 375 degree for 15 minutes. Cool to room temp. Store in tupperwear container in the fridge. Reheat for 1 minute in microwave.
