Ripe Plantain Drink (Atole de Platano)

Adapted from The South American TableServes 2Ingredients:-1 very ripe (black) plantain-1 cinnamon stick-1 cup whole milk-1/4 teaspoon pure vanilla extract-Light brown sugar, to taste
Method:
1. Peel the plantain and cut into 1/2-inch-thick slices, removing any black spots. Place in a medium-size nonreactive saucepan along with the cinnamon stick and water to cover, Bring to a boil, reduce the heat to low, and simmer, covered, until very soft, about 20 minutes.
2. Discard the cinnamon and transfer the plantains with the cooking liquid to a blender. Add the milk and vanilla and process until smooth. Taste; if more sweetness is desired, add light brown sugar to taste and pulse to mix well.
3. Serve warm or at room temperature. This drink tastes best when made just before serving.
