Amazing Healthy Macaroni & Cheese

1 cup dry elbow noodles - boiled1 bag (approx 3 cups) frozen cauliflower - boiled til soft1/2 small onion chopped - saute until soft2 oz cabot 75% RF Cheddar - grated1 Tbsp grated parmesan2 Tbsp FF greek yogurt15 Special K Pototoe Crisps crushed (plain or cheddar)
Boil Elbow noodles & cauliflower (separately) until soft.
Drain both. While boiling saute chopped onion in pan sprayed with cooking spray until soft.
Using a hand blender or food processor puree cauliflower until smooth adding a dash of chicken stock to thin. Add in yogurt, salt, pepper, onion, parmesan & cheddar cheese. stir unil cheese is melted and well combined. Stir in drained elbow noodles.
Spread into an 8x8 baking dish sprayed with cooking spray. Top with crushed chips.
Bake 30 minutes at 350 or until bubbly.
