Veggie goat cheese mini fritattas

Ingredients
9 Eggs2 Tbsp 1% milk2 oz crumbled goat cheese1 C diced tomato1 C diced crimini mushrooms2 C broccoli, chopped3/4 C shredded reduced-fat cheese (I use a Mexican blend, a cheddar variety would work well too)
Directions
Preheat oven to 350. Whisk eggs and milk together. Stir in goat cheese and veggies to combine. Season with salt and pepper. Spoon into muffin cups to about 3/4 full. Top each cup with a little shredded cheese. Bake for 15-18 mins, until egg is set and cheese starts to brown slightly.
