Sweet Potato Pancakes

Ingredients
2 sweet potatoes, peeled and finely shredded or grated1 vidalia onion, finely chopped3 stalks of celery, finely chopped3 eggs3/4 c flour1 tsp salt1 tsp celery salt1Tbsp ground cinnamon1 Tbsp ground cumin4 Tbsp Peanut Oil
Directions
Soak the grated sweet potatoes in cold water for one hour, then drain well (this removes much of the starch).

Heat a cast iron skillet on med and add 1 Tbsp of the peanut oil, reserve the rest and add it to the pan as needed through out cooking process.

Mix the remaining ingredients well and form pancakes in your hand as you add them to the skillet thin them out a bit, thinner pancakes will be crispier, being careful not to crowd them in the pan. Turn when nice and browned. Makes 20 pancakes.
