Great Northern Bean Soup with Ham

1 lb Great Northern Beans soaked overnight per package directionsHam Bone with hamWater to cover ham bone and then some (Approx 8 cups)2 carrots peeled and sliced or diced1 stalk celery sliced1 Medium Onion Diced (about a cup)1 Bay Leaf (fresh or dried)2 pinches french thyme or 2 fresh springs about 3 inchessalt to taste
Soak Beans overnight according to directions.
In a large pot add ham bone and water, simmer for 45 minutes, remove ham bone and ham. Keep broth. To broth add all the other ingredients and simmer for about an hour. After ham bone cools remove ham from bone, pick ham only (no fat) and dice. Return ham to pot to simmer with the rest of ingredients. Taste broth halfway through and add salt if necessary.
