1 c. whole wheat or all purpose flour1 tsp. pumpkin pie spice1/2 tsp. bkg. soda1/2 tsp. bkg. powder1/4 tsp. salt1 c. packed light brown sugar1/4 c. vegetable oil1 15 oz. can pure pumpkin2 large eggs, slightly beaten1 c. lowfat granola cereal, crumbled
Preheat oven to 350º. Grease or line mini-muffin pans.
Combine flour, pumpkin pie spice, bkg. soda, bkg. powder and salt in small bowl. Beat sugar and oil in mixer bowl. Add pumpkin and eggs; beat well. Gradually stir in flour mixture. Spoon batter into prepared muffin cups, filling 2/3 full. Sprinkle each with about a 1/2 tsp. crumbled granola and lightly press into batter.
Bake for 15-20 min or until wood pick inserted into centers comes out clean. Cool in pans for 10 min, then remove and cool completely
