Chinese Chicken Salad

Ingredients
DRESSING3 T. hoisin sauce2 T. peanut butter2 t. brown sugar1 t. hot chili oil or 3/4 t. asian chili paste1 t. freshly grated ginger3 T. seasoned rice vinegar1 T. asian sesame oilsalt to tasteSALAD4 cups shredded cabbage2 scallions1/2 cup Philippine-style noodles or Chun King noodles1 boneless skinless chicken breast2 T. soy sauce1 t. grated gingercilantro to taste if you like it.
Directions
Makes 4 servings. Slice chicken into long thin slices. Put all chicken, 2T. of soy sauce into a non-stick pan. Stir chicken until cooked through. When the chicken is almost done, add the grated ginger and mix in. Whisk all dressing ingredients together in a bowl. Shred cabbage or use pre-shredded. Chop scallion and cilantro finely. Add noodles straight from the package. Toss all ingredients together. You can also add shredded carrots if you like.
