Morri's Homemade Chicken Noodle Soup

4 Chicken Thighs - about a pound2.5 liters water - about 10 cups1/2 c onion, chopped1/2 c celery, chopped1/2 c carrot, chopped1 c potato, diced1 star anise seed pod1 tbsp parsley4 c homemade (or unenriched) egg noodles
Bring 2 liters of water and chicken thighs to boil, lower heat, cover and simmer for at least 1 hour. Add onion, celery, carrots, star anise seed pod, and parsley. Simmer for another hour, and taste. If it tastes strong enough, add a half liter of water (approx. 2 cups) and the diced potatoes.
Cook the noodles separately, drain and rinse well in cold water. Serve into bowls. The chilled noodles will cool down the soup as you serve it.
When the potatoes have cooked through, it's ready to eat!
