Baked Catfish PoBoys

1 T Olive Oil 1 pound catfish nuggets1/2 cup egg substitute1 cup seasoned fish frylettucetomato slices1/2 cup light miracle whip2-3 tablespoons cocktail saucetoasted hoagie rolls with some of the insides scooped out
Heat oven to 450. Coat cookie sheet with olive oil. Rinse your catfish nuggets and pat dry. Dip nuggets in fish fry and coat. Dip into the egg substitute and back into fish fry to coat. Place filets on cookie sheet and bake for 15 minutes. Flip over and bake for another 8 minutes or until golden and crunchy.
Slice hoagie rolls in half lengthwise and scoop out some of the inside of the roll careful to not poke through the crust. Toast rolls in the oven until crispy.
Sauce: Mix miracle whip and cocktail sauce.
Assemble sauce, lettuce, tomato and catfish into hoagie roll and serve!
