Lower Cal Corn Bread Souffle

Ingredients
1 cup, chopped onion2 eggs 1/4 cup Canola Oil1/2 half cup Applesauce, unsweetened1 11oz can Sweet corn kernels1 14 oz can Sweet cream Corn1 box Jiffy corn muffin mix1 cup shredded cheddar cheese
Directions
Pre-heat oven to 325, with rack in middle position

Saute onions in a small amount of oil until translucent, then set aside to cool

In a large mixing bowl, mix applesauce, oil, and eggs
add corn kernels, cream corn, cooled onions, cheddar cheese and Jiffy mix, stir until thoroughly mixed

Pour the mixture into a greased casserole dish and cook on middle rack for 1 hour or until brown on top

Serving Size: makes 8-10 servings
