Slow-Cooker Chicken & Dumplings

Ingredients
1 lb. uncooked boneless, skinless chicken breasts, cut in 1" cubes1 (16 oz) frozen mixed vegetables1 med. onion, diced3 cups fat-free low-sodium chicken broth, divided1 1/2 cups low-fat buttermilk biscuit mix
Directions
Combine chicken, vegies, onion & broth (reserve 1/2 cup, plus 1 tbsp. broth) in slow cooker. Cover. Cook on hight 2 hours. Mix biscuit mix with reserved broth until oistened. Drp by tablespoonfuls over hot chicken and vegetables. Cover. Cook on high 10 minutes. Uncover. Cook on high 20 minutes more.
