Soft Molasses Cookies

2 cups all-purpose flour1/2 cup sugar1/2 cup shortening1/2 cup light molasses1 egg2 teaspoons baking soda1 teaspoon ground ginger1 teaspoon ground cinnamon1/4 teaspoon salt1/3 cup cold waterraisins (optional)
1. Preheat oven to 400 degrees F. Grease cookie sheets (or line with parchment paper).
2. Sift together flour, baking soda, ginger, cinnamon and salt. Set aside.
3. Cream shortening and sugar together at medium speed. Add in molasses, egg and water and beat until well-incorporated.
4. Add in dry ingredients, scraping the bowl down as necessary. The cookie dough should be light and airy.
5. Drop mixture by rounded tablespoonfuls onto cookie sheets, at least 2 inches apart. If desired, add 4-5 raisins.
6. Bake 8 minutes or until top springs back when lightly pressed with a finger. Move cookies to wire racks and cool completely.
