4 teaspooons of bacon fat1 cup cornmeal3/4 cup buttermilk or 3/4 cup mix of goat yogurt and goat milk1 eff1 tsp baking powderHalf tsp saltQuarter tsp baking soda
Heat bacon fat in 6 or 7" heavy iron skillet
Mix 1/3 cup cornmeal with 1/3 cup boiling water. Add remaining wet ingredients.
Mix dry ingredients, including rest of cornmeal.
Add dry ingredients to wet ingredients.
Add melted bacon fat to batter.
Pour back into heavy skillet.
Back at 450 for 25 minutes.
Turn on to rack to cool
