Potato Muffin Cups

Ingredients
9 oz shredded potatoes1/4 cup 2% sharp cheddar shredded cheese2 large eggsvegetables and seasoning to taste (I used 1/4 cup diced onion and 1/2 tsp garlic salt)
Directions
Mix all ingredients in a bowl, put in mini muffin tin and bake at 350 for 20 minutes.

To brown further, increase temp to 400 while making your main dish of egg whites ;)
