1 and 1/2 teaspoons of Ground Cinnomon1 pinch of Malton Salt2 tablespoons of Honey2 small pieces of Crystallized Ginger 1 small Apple2/3 cup of Soya Milk1/2 cup of cooked Porridge1 Egg1 cup of Wholemeal Flour1 tablespoon of Milled Flax, sunflower, Pumpkin, Sesame Seed and Goji Berries 1 and 1/2 teaspoons Baking Powder1/4 cup of Raisins1/4 cup of Dried Cranberries
Pre-heat oven to 180 degrees
1) Core and dice Apple add to a sauce pan with a little
water then cover and simmer until a thick pulp
2) Gently whisk the Egg then add the soy milk, 3 tablespoons of apple sauce made above and honey, beat gently until combined
3) Add porridge, raisins and cranberries, finely chop the ginger then add to mixture
4) Sift all dry ingredients into the batter
5) Distribute batter evenly into 10 greesed muffin cases or muffin tin
6) Bake for 15-20 mins
