Ingredients
1 cup quinoa.5 tsalt2T lemon juice1 clove garlic.5 cup olive oilpint grape tomatoes2/3 cup parsley2 scallion1/3 cup mint .5 cup cucumber
Directions
Cook the Quinoa. Cool. Mix oil, lemon juice and pressed garlic. Add everything together, suitably chopped, minced or pressed.
